Zesty Tomato Pesto Grilled cheese
This savory, spicy, and ooey-gooey grilled cheese hits the spot every time!
INGREDIENTS
2 slices of bread, I used Ezekial sesame sprouted
½ cup sliced cheese, I used Trader Joe’s cheddar/gruyere
2 tbsp pesto, I used Trader Joe’s vegan kale
½ roma tomato, thinly sliced
1 pepperoncini, sliced
Drizzle of extra virgin olive oil
INSTRUCTIONS
1. Begin by spreading the kale pesto on the inside of each slice of bread.
2. On one slice start building your sandwich. Begin with half of the cheese, followed by the tomato, pepperoncini, the remaining cheese, and then the other slice of bread.
3. Heat a drizzle of olive oil in a pan, then place your sandwich on it. Press it firmly with a sandwich press for a few minutes. Make sure it doesn’t burn. Flip it to the other side until the cheese is fully melted.
4. Slice diagonally and enjoy!
