Garlic Dill Yogurt Dip
Crispy sweet potato fries with savory feta, baked to perfection and served with a zesty yogurt dip.
INGREDIENTS
1 large sweet potato, julienned about 1/2 inch thick
1 cup crumbled feta
2 sprigs cilantro, destemmed
1 tsp garlic powder
1 tsp thyme
1 tsp paprika
Extra virgin olive oil
Salt

2/3 cup plain yogurt
1/4 lemon, juiced
1 tsp minced garlic
1 tsp chopped dill
Extra virgin olive oil
Salt
INSTRUCTIONS
1. Preheat the oven to 425Β°F.
2. Prep your fries by placing 1/2 inch julienned sweet potato slices on a baking sheet. Drizzle with olive oil and add garlic powder, thyme, paprika, and salt. Mix well and sprinkle half of the feta on top. Ensure fries are spread out to avoid overcrowding the pan. Bake for 15 minutes, checking halfway through to toss. Add the remaining feta and bake until fries are crispy.
3. While the fries are baking, make the dip. Combine yogurt, lemon juice, minced garlic, chopped dill, olive oil, and salt in a bowl. Mix thoroughly and set aside.
4. Once the fries are done, transfer to a serving plate and top with cilantro. Serve with a side of the zesty Garlic Dill Yogurt Dip and enjoy!
