Sweet Greenie Tahini Surprise

This nutrient-rich, gluten-free, dairy-free, vegan veggie dish is perfect for meal prep or family dinner.

 
 

INGREDIENTS
4 sweet potatoes
1 head of broccoli, cut into pieces
2 cans chickpeas, rinsed
3 cloves garlic, minced
1 tbsp paprika
1 tsp thyme
1 tsp chili flakes
1 tsp garlic powder
Salt & pepper 
Scoop of my Green Tahini

INSTRUCTIONS
1. Begin by washing the sweet potato and poking holes in them with a fork. Place them in the air fryer (or oven) at 400 for 1 hour.

2. While the sweet potatoes are cooking, prepare the chickpeas and broccoli.

3. For the chickpeas, spread them on a sheet pan, pat them dry, and drizzle with olive oil. Sprinkle paprika, thyme and garlic powder and give them a mix.

4. For the broccoli, chop them into 2-inch pieces and place on a sheet pan along with the minced garlic, chili flakes, salt, and pepper. Give them a mix.

5. When the sweet potatoes have about 20 minutes left, place the chickpeas and broccoli in the oven.

6. Once everything is cooked, assemble your plate. Add a half or whole sweet potato, cut in half horizontally, and add two scoops of broccoli and chickpeas.

7. Top with my Green Tahini sauce and enjoy!
