Caprese Skewers

This no-bake, simple, and quick appetizer is perfect for any party or gathering when you don’t have time to cook. The best part? Minimal ingredients and it only takes 5 minutes to put together.

 
 
 
 

INGREDIENTS
10 oz carton of cherry or grape tomatoes
8 oz carton of small mozzarella balls
0.5 oz of fresh basil
*Toothpicks

DRESSING
2 tbsp extra virgin olive oil
1 tbsp balsamic glaze
Salt & pepper

INSTRUCTIONS
1. Cut the basil into 1-2 inch ribbons – it's easy if you roll the basil leaves together and then slice them horizontally.

2. If using fresh mozzarella like I did, drain the liquid and pat the balls dry with a paper towel.

3. Put the skewers together: fold 1 sliver of basil in half and skewer on the toothpick, then add 1 cherry tomato, then 1 mozzarella ball. Keep making them until you run out of ingredients.

4. Make the dressing by add all of the ingredients and stir to combine.

5. Plate the appetizer by layering on a cutting board with dressing on the side, or, fan out like a wreath on a plate with the dressing - in a small container - in the center.

6. Another option is to to drizzle the dressing or solely balsamic glaze over the top right before serving.
