Buffalo Cauliflower Dip
This better-for-you, high-protein dip is perfect for Football Sunday when you crave all the cheesy, spicy goodness.
INGREDIENTS
2 cups cauliflower, cut into 1-inch pieces
1.5 cups cheddar/gruyere cheese, cubed
1.5 cups cottage cheese
½ cup plain yogurt
¼ cup hot sauce, I used Franks RedHot
¼ cup water
2 tbsp ranch dressing, I used Primal Kitchen
1 tbsp extra virgin olive oil
1.5 tbsp paprika
1.5 tbsp garlic powder
2 tsp cayenne
2 tsp cumin
2 sprigs scallions, chopped
Bag of tortilla chips, I used Siete
INSTRUCTIONS
1. Place 1-inch pieces of cauliflower in a bowl, coat with olive oil, ½ tbsp paprika, ½ tbsp garlic powder, 1 tsp cayenne, 1 tsp cumin, and mix.
2. Air-fry or bake cauliflower at 400°F for 15 min.
3. While the cauliflower cooks, make the rest of the mixture. Blend cottage cheese and water until smooth, then pour into a bowl. Add the cubed cheese, RedHot, 1 tbsp paprika, 1 tbsp garlic powder, 1 tsp cayenne, 1 tsp cumin, and mix.
4. When the cauliflower is done, stir into the mixture, then pour into a baking pan and spread evenly. (I used an 8x8 inch pan).
5. Bake at 400°F for 20 minutes
7. Garnish with chopped scallions and serve with a side of chips to scoop all the cheesy goodness.
