Blueberry & Brie Grilled Cheese
Savory, Sweet, and Cheesy Grilled Cheese!
INGREDIENTS
2 cups blueberries
1 cup strawberries
½ cup water
3 tbsp honey
2 tsp cinnamon
Pinch of salt
Juice of ½ lemon
Sourdough bread
Cheddar cheese
Gruyere cheese
Brie cheese
Butter
INSTRUCTIONS
1. Make the compote: In a pan, heat up the blueberries (save a small handful), strawberries, honey, salt, cinnamon, and water. Bring to a boil, then simmer until it reaches a thick consistency. Deglaze the pan with the juice of ½ and mix. Set aside and let cool.
2. Prep your grilled cheese: Cut 2 thick slices of sourdough bread. Shred the cheddar and gruyere cheese, and slice the brie.
3. Assemble the grilled cheese: Butter the outsides of each slice of bread. Flip them over and spread a layer of the spicy berry compote on the insides of both slices. Add a handful of shredded cheese and a few slices of brie and top with the reserved fresh blueberries. Cover and heat in a pan on both sides until the cheese is fully melted.
4. Serve: Slice in half, dunk in extra blueberry compote, and enjoy!
