20 Minute Sausage & Peppers
This 20-minute sheet pan meal is as delicious as it is quick to make. Packed with vibrant veggies and savory protein, it's perfect for meal prep or a quick family dinner!
INGREDIENTS
4 sausages, sliced into bite-sized pieces
1 bunch of asparagus, chopped into 3-inch pieces
1 red pepper, chopped into 3-inch pieces
1 red onion, chopped into 3-inch pieces
21 Seasoning Salute seasoning from Trader Joe’s
*(or substitute: salt, pepper, oregano)
Extra virgin olive oil
FOR SERVING (optional)
Rice
Fresh lime wedges
INSTRUCTIONS
1. Preheat your oven to 400°F (200°C).
2. On a baking sheet, combine the chopped sausage, asparagus, red pepper, and red onion. Drizzle with olive oil and sprinkle with seasoning. Toss together until evenly coated, then spread out in an even layer.
3. Bake at 400°F (200°C) for 10-15 minutes or until golden brown.
4. If serving with rice, prepare according to package instructions.
5. Once the sausage and veggies are done, serve over rice. Squeeze fresh lime juice over the top for an extra zing, and enjoy!
